Black Bean Brownies

Happy Tuesday, everyone. I want to share a recipe that I found on doTERRA's blog for Black Bean Brownies.

If you are like my husband, at this point you are lifting an eyebrow and staring at me with a look of derision.

Seriously? Brownies made from black beans?

Yeah, yeah, I thought so too. At first.

Guys, these are SO GOOD! And trust me when I say they're SUPER easy to make too! I do NOT like making recipes that call for more than a few steps, so this one was perfect. Since we upgraded our range last year, I haven't been baking things nearly as much as I want to, so this was the perfect excuse to brush up on my skillz.

Here's the recipe:

1 {15oz} can of black beans, rinsed and drained
2 large eggs
1/4 cup cocoa powder {I had Ghiradelli}
2/3 cup of honey {I substituted maple syrup because I'm not a big fan of honey}
1/3 cup coconut oil
1/2 teaspoon baking powder
pinch of salt
4 drops of doTERRA peppermint essential oil*
3/4 cup chocolate chips, divided {I used Enjoy Life's free-of-everything-yucky mini chips}

And the how to:

Preheat oven to 350. Put all ingredients except for the chocolate chips in a blender or food processor & blend until smooth {I used my blender}. Pour batter in a large bowl & stir in 1/2 cup chocolate chips {ahem, or save getting a bowl dirty and mix the chocolate chips into your batter while its still in the blender}. Pour into a greased 8x8 pan {I grease pans with coconut oil} and top with the remaining 1/4 cup chocolate chips. Bake 30-35 minutes or until a toothpick inserted into the middle comes out clean. Let it cool, cut them into pieces, and store whatever you don't cram into your face in the next ten minutes in the refrigerator.

THAT'S IT!



Ok, so I maaay have just dumped the rest of the bag of chocolate chips into the blender, but everything else I measured accurately {for once-ha!}. My chocolate chip sprinkling skills leave a bit to be desired but oh well. Because I need to know these things, I estimated the carb count to be about 15g if you cut the pan into 12ths or 20g if you cut the pan into 8ths. 

I love the peppermint flavor that the oil adds to these. I might try them with another oil {maybe orange?} when I make another batch for the guys at work. This will be our go-to brownie recipe for the future!
